Ingredients

  • 2 slices bacon thick cut, halved
  • 5 slices salami thin cut
  • 1/2 cup cheese shredded, your choice (I used 3 cheese blend)
  • 4 slices roasted red pepper
  • 1 tbsp chipotle aioli see recipe above
  • 2 slices bread crusty, thick cut
  • butter

Instructions

  • Cook the bacon to desired doneness, pat dry and set aside
  • briefly fry the salami in the bacon grease to crisp up a little. This way it wont be quite as chewy and easier to eat in the sandwich
  • Butter the outside of each slice of bread
  • Lay one piece butter side down, add the bacon slices, then half the cheese, then the peppers, then the salami.
  • Spread the aioli on the non butter side of the slices and top
  • Sear in a panini press for 4 minutes or weighted down in a grill pan for 3-4 minutes per side
  • Serve with pepperoncini on the side
