BBQ Chicken Banh Mi Sandwich

Ingredients

The slaw

  • 1 lb daikon radish cut into 3mm x 8cm match sticks
  • 6 oz carrot cut into 3mm x 8cm match sticks
  • 1 tsp salt
  • 2 tsp sugar
  • 1/2 cup sugar
  • 1 1/4 cup vinegar

The Chicken

  • 1 3/4 lb chicken thighs boneless, skinless
  • 1 tsp chopped garlic
  • 1/4 tsp chinese five-spice powder
  • 2 tbsp honey
  • 2 tbsp hoisin sauce
  • 1 1/2 tbsp soy sauce
  • 1 tbsp ketchup
  • 2 tsp sesame oil
  • 1 tbsp fruity hot sauce (optional) - or sriracha to taste

The Rest

  • 3/4 large cucumber sliced on a bias
  • 1 cup pickled jalapeno slices recipe above
  • 1-2 cups cilantro roughly chopped, no stems
  • 3/5 cup pate I used liverwurst
  • 1/3 cup mayonnaise
  • maggi seasoning
  • 5 crusty roll

Instructions

The Slaw

  • Add the daikon and carrot to a mixing bowl along with the 1tsp salt and 2tsp sugar
  • massage thoroughly and consistently for 3 minutes. A puddle will form at the bottom of the bowl. Rince the vegetable in a sieve under cold water, then press it hard to squeeze out any other liquid
  • Transfer the vegetables to a mason jar
  • Combine the vinegar and 1/2 cup sugar in a measuring up, whisk til the sugar is fully dissolved, then pour into the jar until the vegetables are fully covered. Cap and refrigerate for at least an hour

The Chicken

  • Combine everything in a large mixing bowl and massage to fully coat the chicken. Cover with plastic wrap and marinade at least 1 hour
  • Add vegetable oil or another high smoke point oil to a pan and heat to medium-high until the oil is shimmering. Add the chicken and marinade to the pan and stir fry for 2 minutes
  • Remove the chicken from the pan and slice into 1/4" strips, return to the pant and stir fry til done. Roughly 4-6 minutes.

The Sandwich

  • Halve the buns. Optionally dry them out a little in a 350F for about 5 minutes. Your jaw muscles will thank you
  • spread pate on the heal of each bun, top with chicken, then cilantro, slaw, jalapeno, cucumber. Spread mayonnaise on the top of the bun and sprinkle with maggi.
  • Slice in half and serve!
