Chorizo and Roasted Cauliflower Hash

Ingredients

  • half cauliflower head of
  • 1 shallot medium , chopped
  • 2 tbsps chopped garlic
  • 1 chorizo diced
  • 1/2 red onion large
  • 1/2 cup green onion diced
  • 3/4 cup black beans
  • 3 tbsps chili powder
  • salt
  • pepper

Instructions

  • Turn on your broiler
  • Chop the cauliflower into 1/2u2033 pieces and arrange in a baking / casserole dish
  • spread garlic around evenly over the cauliflower
  • add in the shallot
  • drizzle liberally with vegetable oil and then sprinkle evenly with half the chili powder
  • toss everything around, flatten out and coat with the rest of the chili powder
  • throw in the broiler for 10 minutes
  • in a large pan start cooking the chorizo on medium high, when it starts to get greasy add the black beans and continue cooking, stirring frequently
  • When the cauliflower is done add it and the red onion to the mix and continue to cook for another 5 minutes, add the green onion and cook another 2 minutes
