Slow Carb Pizza (no wheat, no lactose, no tomatoes)

Ingredients

  • xbd 2 cups cauliflower head (about riced)
  • 1/2 tbsp chopped garlic
  • 1 cup soy cheese non vegan
  • 1 egg , beaten
  • 1 tbsp italian seasoning
  • 2 cups carrot chopped
  • 1 onion medium chopped
  • 3 tbsps margarine
  • 1 tbsp garlic
  • 1/2 cup red wine
  • 1 tbsp apple cider vinegar
  • 900 ml beef broth or
  • salt and pepper ,

Instructions

  • Preheat your oven to 500F
  • Rice the cauliflower in a food processor, then sautee it 6-8 minutes on medium until it thickens and becomes sticky
  • In a bowl combine the cauliflower with the rest of the dough ingredients and mix into a ball with your hands
  • Put down parchment paper on a pizza tray and spread out the cauliflower ball so itu2019s about 1/4u2033 thick on all sides, it should spread out into a good 9-11 inch pizza
  • Bake the dough for 20 u2013 25 minutes (Brittanyu2019s recipe suggested 400 at 25-30, but I did 500 at 25 and every piece was holdable right from the start, although the bottom and edges were a little black. Iu2019ll be fiddling with the settings next time I make this)
  • Remove the dough from the oven and top like a regular pizza.
  • Put the pizza in your broiler for 5 minutes
  • Melt the margarine in a skillet and add the carrots, onions, garlic and wine, season with salt and pepper and sautee covered until carrots are pretty soft and the wine is all but evaporated (at least 10 minutes).
  • Dump it all into a blender and blend while slowly adding the broth/water, checking the consistency frequently until it has a desirable u2018pizza saucinessu2019 to it.
  • When itu2019s the right consistency add the vinegar and blend to mix
