Slow Carb Shepherd’s Pie

Ingredients

  • 1 cauliflower large head
  • 4 tbsps butter /
  • salt and pepper and
  • 1 kg ground beef
  • 1 onion large , chopped
  • 1 1/2 tbsps thyme leaves
  • 1 1/2 tbsps marjoram
  • 1 tsp rosemary
  • 3/4 cup beef broth
  • 1/4 cup sherry cooking
  • 1 1/2 tbsps chopped garlic

Instructions

  • preheat oven to 400F
  • Chop up the cauliflower and steam it for 20 minutes until quite soft
  • Slowly add the cauliflower pieces to the food processor with margarine, and salt. Process, checking occasionally until theyu2019re the consistency you want. (You can mash them with a fork too if you steamed them long enough)
  • Simmer the meat til brown
  • Add onion and garlic to meat and continue to simmer another 5 minutes or so
  • add the veggies and cook another 5 minutes or so
  • stir in the broth, sherry, rosemary, thyme and marjoram
  • simmer on medium high until liquid reduces by half
  • put the meat in a 9u2033 baking dish and cover with mashed cauliflower
  • bake in oven for 30 minutes
