Dill Baked Salmon with Asparagus on Onion Soubise

Ingredients

  • 2 salmon steaks
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp onion powder
  • 1 1/2 tbsps dill fresh , finely chopped
  • olive oil
  • 1 lb vidalia onion peeled , finely chopped
  • 3 tbsps butter
  • 3 tbsps red wine vinegar
  • 5 u2013 8 asparagus stalks

Instructions

  • preheat oven to 400F
  • put salmon in a glass baking dish, drizzle with olive oil, then rub on salt, pepper, onion powder and dill
  • bake salmon for 25 minutes or until flaky
  • in a mixing bowl coat asparagus with salt, olive oil and vinegar, grill to your liking (5 mins per side until grill marks are visible and stalks are floppy)
  • in a medium pan, on low melt butter.
  • add onions and season with salt, stir to coat. Increase heat to medium-low and cover
  • cook onions about 25 mins, stirring occasionally.
  • When onions are transparent and mushy, transfer to a food processor and pulse until onions no longer solid.
