Fish Cakes Fish Cakes, Eat Them Up Yum!

Ingredients

  • 2 potatoes large , peeled and cut into chunks
  • 1 lb salmon skinless fillet
  • 2 tbsps mayonnaise
  • 1 egg , beaten
  • 2 jalapeno pepper fresh , seeded and diced
  • 1 small bunch cilantro fresh , chopped
  • olive oil for pan frying
  • salt and pepper and

Instructions

  • Boil the potatoes til soft, drain and return to pot
  • Poach the fillets for about 5 minutes, then break apart with a fork
  • Add the peppers, mayo, egg, cilantro, salt and pepper to the potatoes and roughly mash it all together, the consistency should be quite chunky, stop mashing as soon as the potatoes arenu2019t chunks any more
  • Lightly mix in the salmon pieces
  • Form into 8 patties
  • Add enough oil to a pan to fully coat the bottom, heat on medium-high until oil begins to crackle.
  • Fry patties 5 minutes per side.
