Make sure the curds are room temperature
Cut the potatoes into fries and deep fry to desired doneness (I do 10 mins at 375F)
While the fries are cooking, make an egg wash by whisking together the egg and milk, then dredge the drumsticks in the wash and toss in flour to coat
When the fries are done, remove from frier, coat with salt and set aside. Cover to keep warm.
Fry drum sticks to desired done-ness (10min at 375F again)
Heat the gravy on low
In another pot melt the butter, then add franks and ketchup. Whisk continously, keep heat at low.
Toss the wings in the sauce.
Build the poutine! Fries then wings then cheese then gravy.
