In a large pan, melt 2 tbsp butter, add onion, garlic, celery and bacon. Cook on low for 5 minutes until softened
Stir in tomatoes and tomato paste, add salt, pepper and sugar to taste.
Add water and bring to a boil then reduce to simmer. Simmer for 15-20 min to reduce.
Coat chicken breasts with salt and pepper.
In a separate pan, brown on all sides the chicken breasts in 2 tbsp butter and the olive oil
Add chicken to sauce, spoon sauce over chicken. Cover pan and simmer 10-15 mins until chicken is done
Garnish with fresh chopped parsley
