Combine paprika, chili powder, cumin salt and pepper in a bowl
Add chicken and corn to a large pan and cook, stirring occasionally until chicken is no longer pink
Add 1/2 cup of water to the pan, then stir in spice mix
Bring the liquid to a boil, then reduce heat and simmer for 5 minutes
Stir in sweet peppers and cook another 3-5 minutes
add green onions and cilantro and cook another 3 u2013 5 minutes, then remove from heat
Grease a shallow pan, heat on medium for a couple minutes, then put a tortilla on the pan
add a layer of cheese, then spoon on a third of the chicken in an even layer
cover with more cheese and then another tortilla
Fry til the bottom tortilla is browned and the bottom cheese is melted. Flip and repeat.
Cut the quesadilla and serve with salsa, guac and sour cream
