Bacon Cheddar Meatloaf with Guinness Sauce

  • 3/4 lb ground beef
  • 3/4 lb ground veal
  • 1 tbsp mustard
  • 1 tbsp worcestershire sauce
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/4 cup milk
  • 1/2 cup cheddar cheese shredded old
  • salt and pepper /
  • 1 lb bacon
  • 1 tbsp chopped garlic
  • 1 tbsp brown sugar
  • 1 tbsp cider vinegar


  • preheat oven to 350F
  • in a large mixing bowl, mix together meats, mustard, worcestershire sauce, egg, breadcrumbs, milk, salt / pepper, cheddar
  • Line a meatloaf pan with the bacon by draping the bacon strips into it, leaving a couple inches draped outside the pan
  • Pack the pan with the meat mixture, then fold the extra bacon over the top, like wrapping a delicious meat present with more meat
  • Put the meat loaf in the oven for 1 hour
  • Pour the guinness into a pot and bring to a boil
  • lower heat to medium high and simmer til liquid is reduced by half.
  • Mix in sugar and vinegar
  • When the meat loaf is done, allow to sit 20 minutes before cutting
