In a skillet saute the onions in olive oil til soft
Add chicken, spices and cilantro to the pan and brown
Once the chicken is browned add the chicken and onions to a large pot
In the skillet fry the eggplant then the cauliflower, add both to the pot when fried
Cover everything with the lentils and chickpeas and add the broth.
Bring it to a boil, then turn to low, cover and simmer for 40 minutes
serve with greek yogurt
