Boil noodles to package instructions.
In a small bowl whisk together sauce ingredients. Set aside.
Heat oil on medium high in a wok, add in mushrooms, carrots and pepper. Stir fry for 3-4 minutes til vegetables soften.
Add peas and spinach, cover and let cook another 3-4 minutes, stirring occasionally til spinach wilts.
Strain noodles when cooked, add sauce and noodles to the wok, toss continuously til everything is covered evenly in sauce.
