Toss the chicken in the chili powder, cumin, salt and pepper til fully coated.
Cook the chicken on medium high in a large pan til no longer pink. Remove from the pan and set aside.
Add onions and chipotle peppers to the pan. Season with salt and cook, tossing to combine. Cook til onions begin to soften slightly. Return chicken to pan and cook another 4 minutes. Add roasted red pepper and toss for a minute to heat pepper.
Turn on your broiler and cut a piece of focaccia about 6x4"
Place spinach on bottom piece of bread, then chicken, top with cheese. Place in broiler for a minute or two til cheese is melted. While the cheese is melting, spread guacamole on top slice of the sandwich.
Cut sandwich in half width wise and server.
