Pork Souvlaki Dinner

Ingredients

  • 2 lbs pork loin cut into cubes 1-2"

For the potatoes

  • 4 quartered potatoes yellow ,
  • 2 tbsps chopped garlic
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 1/2 cups chicken broth
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • pepper

For The Salad

  • green leaf lettuce
  • 1 tomato roma , sliced
  • 1/2 yellow onion , sliced thin
  • black olives
  • feta cheese

Instructions

  • Preheat oven to 350F
  • Place potatoes in a 9x13 baking dish.
  • Combine all liquid ingredients then pour over potatoes.
  • Cover dish with tin foil and poke holes for steam
  • Roast at 350F for 2 hours.
  • Start cooking the meat and riceat about the 90 minute mark to have everything ready at the same time.
  • Toss the salad ingredients in a salad bowl
  • Build a plate of salad, rice, souvlaki and potatoes. Liberally cover everything with tzatziki, feta and left over potato juices.
