Preheat oven to 350F
Place potatoes in a 9x13 baking dish.
Combine all liquid ingredients then pour over potatoes.
Cover dish with tin foil and poke holes for steam
Roast at 350F for 2 hours.
Start cooking the meat and riceat about the 90 minute mark to have everything ready at the same time.
Toss the salad ingredients in a salad bowl
Build a plate of salad, rice, souvlaki and potatoes. Liberally cover everything with tzatziki, feta and left over potato juices.
