pre-heat oven to 350F
On Medium high, heat the oil, vinegar, garlic, salt and oregano in a large pan.
When the mixture begins to sizzle, stir in the chicken and brown. About 5-8 minutes. With a slotted spoon remove the chicken and set aside.
Add the tomatoes and zucchini to the pan and sautee til tomatoes wilt and zucchini browns- another 8-10 minutes.
Mix together eggs, milk and pepper (to taste) in a large mixing bowl.
Add chicken, all vegetables and cheese to a 9x13 baking dish. Arrange the ingredients to spread out evenly, then pour in the eggs.
Bake, covered for 45 minutes until center sets.
Serve with salsa (2 tbsp per piece)
