preheat oven to 400F
Place sausage and vegetables in a large mixing bowl, toss with oil, garlic and perri perri powder to coat evenly
place everything in a glass 13x9 baking dish, cover with tin foil and poke holes in the foil
Roast at 400F for 50 minutes
Fry eggs sunny side up with a soft yolk, serve hash topped with egg and garnished with green onion
