Cauliflower Hashbrowns

Ingredients

  • 1 small cauliflower riced
  • 2 large egg
  • 1 cup cheddar cheese
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

  • Preheat the oven to 400F
  • Microwave the riced cauliflower for 3 minutes then squeeze out the moisture in cheese cloth
  • Combine all ingredients in a large mixing bowl
  • Add the cauliflower to a baking sheet 1/2 cup at a time and shape into rectangles
  • Bake the hash browns for 15-30 minutes until golden brown, then allow to cool at least 10 minutes
