Breakfast Sausage Scramble

Ingredients

  • 12 large egg
  • 8 links Italian Sausage casing removed
  • 1 red pepper diced
  • 1 green pepper diced
  • 3 cups cheddar cheese shredded
  • 600 ml salsa
  • 1/4 cup 10% cream
  • salt and pepper
  • 2 large onion chopped

Instructions

  • In a large pan, cook the sausage on medium til brown, breaking apart as you go. 8-12 minutes
  • Stir in onions and allow to soften, 3-5 minutes
  • Stir in peppers and cook another 3 minutes or so
  • While the peppers cook, whisk together the eggs, cream, salt and pepper in a medium sized mixing bowl
  • Remove everything from the pan, leaving some grease
  • Add the eggs to the pan, increase heat to medium high and scramble.
  • Serve topped with cheese and salsa
