In a large pot heat some olive oil then saute the onions and garlic til fragrant, about 1 minute
Add the carrots and celery and cook another 5 minutes, stirring frequently.
Add the beef and cook til brown, breaking up with a wooden spoon.
Add the beer, bouillon, worchestershire sauce, thyme and bay leaves. Bring to a simmer on high heat then reduce to medium and simmer for 20-30 minutes. Stirring occasionally.
preheat oven to 350F
Add potatoes to a pot and cover with water. Bring to a boil and boil covered for at least 20 minutes until soft.
Strain the potatoes, return them to their pot. Add butter and salt and pepper to taste then mash roughly.
Add the meat to a large, deep baking dish. Top with potatoes and then use a fork to evenly spread the potatoes over the meat. Bake in the oven at 350F for 25-30 minutes. Remove from oven and rest 5 minutes before serving.
