Season your wok with some vegetable oil and bring to heat on medium high until oil is shimmering and whisps of smoke begin to appear- dispose of the oil and add more, continue to heat til shimmering.
Use tongs to remove the beef from the bag
Stir fry the beef, constantly moving, until most pieces lose their pink
Remove the beef to a separate bowl, leaving as much marinade as you can
add carrots to the wok along with the rest of the marinade
add the water to the pot and scrape up bottom, cover and steam the carrots for 2 minutes
add the brocolli and toss to fully coat. Continue to steam for another 2 minutes or until sauce has thickened
return the beef and any marinade from the bowl and toss to combine
Continue to stir fry another 1-2 minutes
remove from heat and serve over rice
