Add the steak to a ziplock bag with all the marinade ingredient, press out the air, seal and massage. Refrigerate til needed
Par boil the potatoes for 8 minutes til slightly soft, drain put in a bowl and toss with salt
In a large pan heat 1 tbsp butter on medium high heat, once melted and sizzling add the potatoes and stir til fully coated. Cook 4 minutes uncovered, then 5 minutes covered, stirring occasionally. When browned and fork soft remove from pan with a slotted spoon.
Add the 2 tbsp butter, herbs and garlic to the pan, stir and saute til fragrant- 1-2 minutes
Remove the steak from the ziplock bag with tongs, leaving the marinade. Add the steak to the pan and fry til brown- 4-5 minutes uncovered.
Add the potatoes back to the pan, toss to combine and cook covered for 4 minutes. Adjust seasoning with salt and pepper and serve
