heat oil in a large pan, add the zoodles, a liberal amount of salt and sweat on medium for 8 - 10 mins til noodles begin to soften, shrink and lose moisture. Transfer the noodles to a sieve or colander in a bowl to allow them to further drain while you work
Add the sausage slices to the pan with a little more oil. turn the heat to medium high and fry for about 5 minutes til the slices darken and some begin to blacken a little. Remove the sausage from the pan and set aside
Add the onion and garlic to the pan and saute til fragrant and onions become translucent- 3-5 minutes.
Add the Italian seasoning, pepper flakes and tomatoes and cook, tossing frequently, another 2 minutes or so until tomatoes begin to wilt.
Add the lemon juice and scrape the pan smooth with a flat wood spatula. Add the broth, sausage and noodles, season with pepper and toss to combine. Bring to a boil, then reduce to a simmer and cook another 3-4 minutes, tossing frequently to coat everything with the sauce.
