Cheesy Vodka Chicken Sandwich

Ingredients

  • 1 8-10" baguette halved horizontally
  • 80 g salami sliced
  • 1 chicken breast boneless, skinless, butterflied, hammered 1/4" thick
  • 1 cup vodka sauce
  • 8-10 leaves basil chiffoned
  • 8-10 pepperoncini sliced
  • 1 tbsp butter
  • 4-5 slices Mozzarella, Fresh
  • 1 egg
  • 1/4 cup bread crumbs
  • 2 tbsp flour

Instructions

  • In a small bowl mix together the sliced peppers and basil
  • pre heat your broiler
  • lay the salami slices down on the heal of the baguette and butter the top. Place both cut side up on a baking tray
  • whisk the egg, coat the chicken breast in the flour, dredge in the egg, then coat evenly with the bread crumbs
  • heat oil on medium-high in a medium skillet, when shimmering add the chicken breasts and cook til breadcrumbs are golden brown 5-8 minutes.
  • Turn the chicken breasts and add the vodka sauce to the pan. Move the breasts around to fully coat, then cover and simmer on medium for another 2-4 minutes
  • lay the chicken breasts on the salami on the heel of the bread, top with any remaining sauce from the pan then lay the mozzarella slices on top
  • Place the tray in the oven on the top shelf and broil until the cheese has fully melted and begins to brown.
  • Remove the sandwich from the broiler, top liberally with basil and peppers, cut in half and serve
