heat a large skillet to medium high heat, sear the sausages on all sides til brown, remove from the pan and slice into 2" pieces, then return them to the pan and continue to sear til dark brown - 5-8 minutes
Remove the sausages from the pan, turn the heat to high and add the white wine, then scrape up all the brown bits off the pan. Continue to simmer on high until the wine reduces- 1-2 min. Reduce the heat to medium and add the butter, stir it until it melts, then stir in the flour to form a roux
Add the rest of the ingredients except the sausage, whisk vigorously until the sauce is smooth, bring to a boil then reduce to medium-low and return the sausage to the pan.
Cook un covered for 10 minutes until the gravy reduces and thickens to your desired thickness. Or optionally add 1 tbsp cornstarch mixed with 2 tbsp water to thicken it quicker
Serve with frozen fries and veggies for a quick weeknight meal
