or any long grain rice

red onion
chopped

jalapeno pepper
chopped

garlic
crushed

cumin

chicken broth

cilantro
chopped

tbsp
lime juice
Instructions
heat oil in a medium pot, add peppers, onions salt and cumin
saute for 3-5 minutes until beginning to soften
add the rice, stir and continue to saute another 3 minutes
Add the broth, bring to a boil, cover and reduce heat to low, simmer 10 minutes until all broth is absorbed
stir in lime juice and cilantro before serving
