Ingredients

  • 2 tbsp olive oil
  • 1 1/2 cups basmati or any long grain rice
  • 1/2 cup red onion chopped
  • 2 large jalapeno pepper chopped
  • 3 clove garlic crushed
  • 1 tsp cumin
  • 3 cups chicken broth
  • 1/2 cup cilantro chopped
  • 2 tbsp lime juice

Instructions

  • heat oil in a medium pot, add peppers, onions salt and cumin
  • saute for 3-5 minutes until beginning to soften
  • add the rice, stir and continue to saute another 3 minutes
  • Add the broth, bring to a boil, cover and reduce heat to low, simmer 10 minutes until all broth is absorbed
  • stir in lime juice and cilantro before serving
