Ingredients

The Crust

  • 2 1/2 cup almond flour
  • 1/4 cup Monk Fruit Sweetener or other sugar free sweetener
  • 1/4 tsp salt
  • 1/4 cup coconut oil
  • 1 large egg whisked
  • 1/2 tsp vanilla extract

Filling

  • 1/3 cup Powdered Monk Fruit Sweetener or other sugar free powdered sweetener
  • 1/4 cup almond flour
  • 4 large egg
  • 3/4 cup lemon juice about 6 large lemons
  • 1 tbsp lemon zest about 1 whole lemon worth

Optional Garnish

  • 2 tbsp Monk Fruit Sweetener
  • 9-18 small mint leaves

Instructions

The Filling

  • Set a rack in the center and preheat oven to 350F
  • In a medium bowl combine the almond flour and powdered sweetener
  • whisk in the eggs, lemon juice, lemon zest until smooth
  • Set aside

The Crust

  • Combine flour sweetener and salt in a large mixing bowl
  • stir in coconut oil (should be liquid)
  • stir in the egg and the vanilla
  • Line a 9x9 baking pan with parchment paper then press in the crust, forming it to spread to the edges and be smooth and even on top
  • Bake on middle rack at 350F for 13-16 minutes or until firm and golden

Assembly

  • Remove the finished crust from the oven and immediately add the filling on top, spreading as needed to cover whole surface evenly
  • return pan to oven for another 15-18 minutes until filling sets but is still soft
  • Cool completely in the pan, try not to move much and DO NOT SLICE
  • refrigerate in the pan for 2 hours, then remove and cut into 9 equal squares

(Optional) Garnish

  • Dust squares with more powdered sweetener and mint leaves
