Preheat oven to 400F
Cut the cauliflower into small bite size pieces, about the same size you would potatoes you were gonna roast. Lay the pieces out in a caserole dish, drizzle liberally with olive oil and cover with your spices.
Roast the cauliflower for around 30 minutes or until itu2019s soft (a fork can easily slide in)
Sautee the spinach in butter with garlic til itu2019s how you like it
Make your holandaise sauce, or buy it. I only made it from scratch because the instant stuff I use has cornstarch in it.
Poach your egg (I like the splash of vinegar and stir the water method, cook for 2:30 mins method)
