Coq Au Vin in White Wine Sauce

Ingredients

  • 2 chicken leg skin on , bone in
  • , 8 cloves garlic peeled and halved u2013 10
  • 3 celery ribs , chopped
  • 1 shallot , finely chopped
  • 1 cup white wine, dry (I used Louis Latour Chardonnay)
  • 1 cup water
  • 2 tbsps olive oil
  • 1/4 cup parsley chopped

Instructions

  • Sear the chicken in the olive oil until golden brown. Remove and set aside.
  • Add the garlic and celery to the pan and saute until garlic is browned and celery begins to soften
  • Add the wine and shalot and simmer until reduced to half, then add the water and bring back to simmer
  • Re-add the chicken and cook partially covered for 20-25 minutes.
