Chicken Satay and Sriracha Peanut Sauce

Ingredients

  • 4 tbsps peanut butter creamy
  • 1/3 cup soy sauce
  • 1/2 cup lemon juice
  • 1 tbsp lemon juice
  • 1/2 tbsp soy sauce
  • 2 tbsps curry powder
  • 1 tbsp chopped garlic
  • 1 lb chicken breast or thighs , cut into cubes 1/5 u2033
  • 2 - 3 tbsps sriracha
  • 1/2 tbsp peanut oil or olive oil

Instructions

  • Heat a grill pan, or bbq
  • In a large bowl mix 2 tbsp peanut butter, 1/3 cup soy sauce, 1/2 cup lemon juice, curry powder, garlic. Whisk until smooth.
  • Add chicken to marinade and let sit as long as you want.
  • Grill skewers 2-3 minutes per side
  • Peanut Sauce: In a small bowl use a small spoon to mix together 2tbsp peanut butter, 1tbsp lemon juice, 1/2 tbsp soy sauce, sriracha sauce, oil. Mix until thoroughly combined.
