Season chicken both sides with salt and pepper then sear in oil to golden brown in large pan- 5 minutes, remove legs and set aside
Add mushrooms, garlic, onions salt and pepper and saute til onions start to become translucent
return chicken to pan, add tomato sauce, chicken stock, fish sauce, bay leaves
Bring to light simmer and cook, covered for 30 minutes, stirring occasionally.
Add red pepper slices and cook another 10 minutes.
