Preheat oven to 375
mix together ricotta and parmesian
Grill zucchini slices on both sides (1-2 mins per side)
In a large pan, brown meat, drain fat and set aside
Add oil, onion and garlic to pan and sautee til onions are translucent
return meat to pan, add tomatoes, basil, salt and pepper. Bring to boil, then turn down heat and simmer at least 15-20 mins (up to 40 if you want)
In a 9xd712 baking dish add a layer of zucchini, then spread meat sauce on top, then ricotta then another layer of zucchini, then mozarella
Bake 45 minutes at 375F
