Ingredients

  • 6 10 tortilla u2033
  • 3 chicken breast medium , diced
  • 2 cups corn
  • 2 peppers sweet (red, orange or yellow)
  • 3 cups cheddar cheese shredded sharp
  • 1 tbsp paprika smoky
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1/2 tbsp salt
  • 1 tsp pepper
  • 1/2 cup green onion chopped
  • 1/4 cup cilantro chopped fresh
  • salsa for serving
  • sour cream for serving
  • guacamole for serving

Instructions

  • Combine paprika, chili powder, cumin salt and pepper in a bowl
  • Add chicken and corn to a large pan and cook, stirring occasionally until chicken is no longer pink
  • Add 1/2 cup of water to the pan, then stir in spice mix
  • Bring the liquid to a boil, then reduce heat and simmer for 5 minutes
  • Stir in sweet peppers and cook another 3-5 minutes
  • add green onions and cilantro and cook another 3 u2013 5 minutes, then remove from heat
  • Grease a shallow pan, heat on medium for a couple minutes, then put a tortilla on the pan
  • add a layer of cheese, then spoon on a third of the chicken in an even layer
  • cover with more cheese and then another tortilla
  • Fry til the bottom tortilla is browned and the bottom cheese is melted. Flip and repeat.
  • Cut the quesadilla and serve with salsa, guac and sour cream
