Butter Croissants stuffed with sausage and capers

Ingredients

  • 4 butter straight croissants
  • 1/4 cup parsley chopped fresh
  • 2 sausage
  • 2 cups cheese shredded
  • 1 tbsp chopped garlic

Instructions

  • Turn on your broiler
  • Cook the sausages in a large pan, when theyu2019re cooked, remove them and cut into diagonal slices. Keep the oils from the sausage in the pan
  • Add the garlic to the pan and saute
  • stir in the capers and saute
  • Add the sausage slices back to the pan, add the parsley and saute til the parsley begins to wilt. Remove it all from the pan, keeping the oils again
  • Cut the croissants to create a small lid.
  • Turn the heat up to high on the pan and toast the croissants in the oil
  • Put the croissants in a baking pan, push out a pocket in each croissant, fill it with the sausage and capers and top with cheese
  • broil without the lids for 1-2 minutes, just enough to melt the cheese

Notes

(I got fancy and used maple syrup and spice sausages, but any spicy sausage will do, a sweet note is a delicious touch)
Ramsay’s recipe called for fontina, but all the cheese shops were closed and Metro didn’t have it. I was gonna use pepper jack but forgot to get it at Metro, so this was just plain ol mozzarella
