In a large pan, heat oil and butter, fry the bay leaf til fragrant, around 5 minutes
Combine oil and 1 tbsp ginger with oil in a food processor, process into paste, add the paste into the pan and stir to combine, cook another 3 minutes
add the tomato puree and stir well to combine
add water, stir well then allow to simmer for 5 u2013 10 minutes
add jalapenos and let simmer until sauce begins to thicken
add the paneer cubes and cook 2-3 minutes
stir in fenugreek and garam masala and serve over basmati
