Chicken Salad with Asian Pear and Sriracha Dressing

Ingredients

  • 1/4 cup mayonnaise light works too
  • 2 tbsps apple cider vinegar
  • 1 tbsp sriracha
  • 1 tbsp dijon mustard
  • 2 cups chicken cooked , pieces 1/2 "
  • 2 celery ribs diced small
  • 1 red onion slice diced
  • 1/4 cup green onion chopped
  • 2 tbsps parsley fresh chopped fine
  • 1 asian pear cored , diced medium
  • 1/4 cup raisins
  • salt
  • pepper

Instructions

  • heat some olive oil in a large pan on medium high. Put chicken in pan, season liberally with salt and pepper, cook 4 - 6 minutes
  • In a small mixing bowl whisk together mayo, vinegar, sriracha, mustard. Season with salt and pepper
  • Toss chicken, fruits and vegetables with dressing til thoroughly coated. Refrigerate at least an hour before serving.
