Cheesy Penne and Chicken with Sun Dried Tomatoes

Ingredients
2
chicken breast
boneless skinless, cut into bite sized pieces

tomato
sun dried , chopped

paprika

cream

basil
chopped fresh

pasta water
reserved
1 1/2
tbsps
chopped garlic

mozzarella
shredded

parmesan
grated (optional)
Instructions
Cook the pasta til al dente. Drain and reserve 1/2 a cup of the water.
In a large pot saute garlic in oil til fragrant, add chicken and season with salt, pepper and paprika. Cook til no longer pink.
Add the tomatoes and continue to cook another 3-6 minutes, stirring occasionally.
Add cream and cheese(s), stir til mozzarella melts completely. Taste and adjust seasoning with salt and pepper.
Add drained pasta and 1/2 cup pasta water. Stir til pasta is fully coated. Stir in basil and red pepper flakes and serve.
Notes
the fresh basil makes a huge difference over dried!
