Cheesy Penne and Chicken with Sun Dried Tomatoes

Ingredients

  • 2 chicken breast boneless skinless, cut into bite sized pieces
  • 6 tomato sun dried , chopped
  • 1 1/2 tsps paprika
  • 1 cup cream 10 %
  • 1/2 cup basil chopped fresh
  • 1/4 tsp red pepper flakes
  • 1/2 cup pasta water reserved
  • 1 1/2 tbsps chopped garlic
  • 1 cup mozzarella shredded
  • 2 tbsps parmesan grated (optional)

Instructions

  • Cook the pasta til al dente. Drain and reserve 1/2 a cup of the water.
  • In a large pot saute garlic in oil til fragrant, add chicken and season with salt, pepper and paprika. Cook til no longer pink.
  • Add the tomatoes and continue to cook another 3-6 minutes, stirring occasionally.
  • Add cream and cheese(s), stir til mozzarella melts completely. Taste and adjust seasoning with salt and pepper.
  • Add drained pasta and 1/2 cup pasta water. Stir til pasta is fully coated. Stir in basil and red pepper flakes and serve.

Notes

the fresh basil makes a huge difference over dried!
