Ginger Beef with Button Mushrooms and Kale on Quinoa

Ingredients

Marinade

  • 1/3 cup soy sauce
  • 1/2 cup broth (veggy, chicken or beef)
  • 3 tbsps rice vinegar
  • 2 tbsps corn starch
  • 1 tbsp ginger fresh grated
  • pepper

The Rest

  • 1 " 1 lb beef fast fry , sliced into squares
  • 2 tbsps chopped garlic
  • 2 tbsps olive oil
  • 2 cups button mushrooms , halved
  • 3 cups kale chopped
  • 2 green onion , sliced

Instructions

  • Whisk the marinade together in a mixing bowl then add it and the beef to a ziplock bag. Massage to coat, then refrigerate at least an hour.
  • Cook the quinoa to package directions.
  • Remove the beef from the marinade, but keep the marinade. Brown the meat in a large pan or wok. Remove the meat from the wok and set aside
  • Add the mushrooms and garlic to the pan and saute til the garlic is fragrant. Then add the kale and pour in the marinade. Bring to a boil and reduce to simmer until the kale wilts. Return the beef to the pan and cook another 3-5 mninutes.
  • Garnish with green onions and serve over quinoa
