Whisk the marinade together in a mixing bowl then add it and the beef to a ziplock bag. Massage to coat, then refrigerate at least an hour.
Cook the quinoa to package directions.
Remove the beef from the marinade, but keep the marinade. Brown the meat in a large pan or wok. Remove the meat from the wok and set aside
Add the mushrooms and garlic to the pan and saute til the garlic is fragrant. Then add the kale and pour in the marinade. Bring to a boil and reduce to simmer until the kale wilts. Return the beef to the pan and cook another 3-5 mninutes.
Garnish with green onions and serve over quinoa
