Kung Pao Cauliflower

Ingredients

  • 3/4 cauliflower large , chopped into florets
  • 1 red pepper , sliced
  • 1 orange pepper , sliced
  • 1 pepper yellow sliced
  • 5 green onion , sliced
  • 1/2 cup cashews
  • 1 tsp red pepper flakes
  • 1 tbsp chopped garlic
  • olive oil
  • salt
  • pepper
  • olive oil
  • quinoa

For The Sauce

  • 2 tbsps rice vinegar
  • 2 tbsps ketchup
  • 2 tbsps sriracha
  • 4 tbsps soy sauce
  • 1/3 cup water
  • 3 tsps corn starch

Instructions

  • Cook quinoa to package directions
  • Mix together sauce ingredients in a separate bowl.
  • Heat some olive oil in a large pan, add cauliflower and season with salt and pepper. Cover pan and saute for 3-5 minutes. Remove cauliflower from pan and set aside.
  • Add peppers and garlic to the pan and saute for 3-5 minutes. Return cauliflower to the pan with cashews and coat with sauce. Stir to fully coat. Cover and cook for another 5-8 minutes til cauliflower softens.
  • Stir in green onions and serve over quinoa
