Cook quinoa to package directions
Mix together sauce ingredients in a separate bowl.
Heat some olive oil in a large pan, add cauliflower and season with salt and pepper. Cover pan and saute for 3-5 minutes. Remove cauliflower from pan and set aside.
Add peppers and garlic to the pan and saute for 3-5 minutes. Return cauliflower to the pan with cashews and coat with sauce. Stir to fully coat. Cover and cook for another 5-8 minutes til cauliflower softens.
Stir in green onions and serve over quinoa
