Ingredients

For The Salad

  • 1 red pepper
  • 1 pepper yellow
  • 1/2 English cucumber , chopped
  • 2 cups grape tomatoes , halved
  • 2 cups red onion chopped
  • 200 g jalapeno pepper havardi , cut into cubes
  • 200 g salami , torn up
  • 1/4 cup olive sliced green

For The Dressing

  • 3/4 cup olive oil
  • 1/2 cup rice wine vinegar white
  • 1 tbsp oregano
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Cook the rotini to package directions then strain under cold water.
  • Combine all salad ingredients in a large mixing bowl.
  • In a medium sized mixing bowl whisk together dressing ingredients. Pour dressing over salad and toss to thoroughly coat the salad.
  • Cover and refrigerate at least 4 hours, ideally over night.
