Shredded Chicken on home made corn tortillas

Ingredients

For The Carnitas

  • 5 - 6 chicken thighs bone in, skin on
  • 1 1/2 cups orange juice
  • 1/2 cup lime juice
  • 2 tbsps chopped garlic
  • 2 tbsps chili powder
  • 2 tsps cumin
  • 2 tsps oregano
  • 1 tsp salt

Toppings

  • 1/2 red onion , sliced
  • 1/2 cup cilantro fresh chopped
  • salsa verde
  • queso fresco crumbled

Instructions

  • Place all the carnita ingredients in a slow cooker and cook on low for 6-8 hours or on high for 5 hours.
  • Remove the chicken from the slowcooker and pull apart with 2 forks, removing the bones.
  • Optionally finish the meat in a skillet with a bit of the juices before serving on tortillas with toppings.
