Bring your oil up to 340F, fry your fries for 9 minutes
Cook the bacon til firm, but not hard.
Heat the gravy to boiling then bring down to a simmer. The gravy should be extremely hot to melt the curds
When the fries are done toss them with the salt, then plate them. Spread curds over the fries then top with gravy, then sour cream then bacon and onions.
