Macaroni Salad with a kick

Ingredients

  • 1 lb macaroni elbo
  • 1 red onion medium , diced small
  • 3 celery ribs, chopped
  • 3 tbsps lemon juice
  • 3 tbsps dijon mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 1/2 cups mayonnaise
  • salt
  • pepper

Instructions

  • Cook the pasta til it's el dente, about 6-8 minutes
  • Drain the pasta and rinse with cold water til noodles are cold
  • Place all ingredients except the mayo in a large bowl and mix thoroughly to coat the pasta. Wait 2-5 minutes.
  • Add the mayo, mix thoroughly to coat the pasta. Refrigerate at least 1 hour before serving.
