Creamy Tuscan Chicken with Sun Dried Tomatoes and Zucchini Noodles

Ingredients

  • 1 1/2 lbs chicken breast sliced into 1" pieces
  • 5 medium zucchini spiralized
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup grated parmesan
  • 1/2 cup basil chiffoned
  • 1/2 cup sun dried tomato sliced
  • 3/4 cup cream 18% or 35%
  • 1/4 cup white wine, dry

Instructions

  • In a large pan heat vegetable oil on medium, add the zucchini noodles and season liberally with salt.
  • Saute the noodles for 5-8 minutes til fully soft. Remove from the pan and set aside in a sieve to drain even more.
  • rinse the pan, add more oil and heat to shimmering on medium high. Add the chicken and saute til almost no longer pink. Add the garlic powder, Italian seasoning, salt and pepper and stir to combine and finish browning on high heat.
  • Use a slotted spoon to remove the chicken from the pan, leaving the juices. Keep the heat on and add the tomatoes, saute 2-4 minutes on medium high til fragrant.
  • Add the wine and scrape the pan with a wooden spoon. Add the broth, cream and chicken and stir to combine. Once the liquid begins to simmer, remove the pan from the heat and stir in the cheese. Return to heat, cover and simmer for 3 minutes, then fold in the noodles and basil and simmer another 1-2 minutes.
