Preheat oven to 425F
Heat oil in a large pot
Rub chicken with all the rub to be liberally coated. Sear the breasts on all sides, then add the water and broil for 20 minutes
While the chicken broils combine the cream cheese and buffalo sauce in a mixing bowl and set aside
Remove the chicken from the pot, shred it and return it to the pot. Bring to a heavy simmer, reduce heat to medium-low and simmer for 5 minutes.
use a slotted spoon to remove the chicken from the pot, leaving the liquid. Add the chicken to the bowl of cream cheese and use a spoon to fully fold it in
spoon the chicken into the tortillas and roll them tightly. Place them evenly in a 9x13 baking dish and bake at 425F for 18 minutes
Remove the taquitos from the oven, sprinkle evenly with the cheddar and broil for 1 - 2 minutes. Serve topped with blue cheese dressing and optionally with hot sauce or a side of salsa.
