Sweet Potato Noodles with Sauteed Spinach in Cashew Sauce

Ingredients
- 1 cup cashews
- 3/4 cup water
- salt
- pepper
- olive oil
- 3 sweet potato , spiralized
- 2 cups spinach baby
- handful basil fresh , chopped
- 2 tbsps chopped garlic
Instructions
- Put the cashews, water, salt, pepper and 1 tbsp garlic in a food processor and process until it becomes white and creamy.
- saute the noodles with olive oil in a large pan until slightly crispy- 3-5 minutes. Remove the noodles and set aside.
- Add the spinach to the pan with salt and the other 1tbsp garlic. Saute til fully wilted- 3-5 minutes.
- Return the noodles to the pan with the basil and sauce. Toss it all thoroughly to coat everything and cook 3-5 minutes til sauce is heated.
