  • 8" Ciabata bread cut to 6-8" long, halved
  • butter or margarine
  • 2 slices bacon
  • 1 breakfast sausage sliced at an extreme bias
  • 3 slices blood pudding
  • 1/2 cup mushroom sliced
  • 1/2 cup grape tomatoes halved lengthwise
  • brown sauce or HP
  • 1 egg
  • baked beans for serving (optional)


  • Heat a cast iron pan on medium high heat and fry the bacon. It should be well cooked but not crispy. You want it to tear easily in your teeth, but still be maleable.
  • Remove the bacon from the pan, keeping the grease and fry the sausage slices 2-3 minutes per side.
  • Remove the sausages from the pan, keeping the grease and fry the blood pudding slices 1-2 minutes per side
  • Remove the blood pudding from the pan, leaving the grease and add the mushroom and tomatoes. Saute til mushrooms are deep brown and tomatoes are well wilted.
  • Remove the veggies from the pan and then fry the egg sunny side up.
  • Hollow out the heel of the bun and butter both sides.
  • Build the sandwich in this order from bottom to top: veggies, sausages, bacon, blood pudding, egg. Top with brown sauce and serve with the bun top and a large knife on the side so the recipient can press the yolk and cut the sandwich when they're ready
